Frosting: from Hints & Tips
"3. Expanding Frosting. When you buy a container of cake frosting from the store, whip it with your mixer for a few minutes. You can double it in size. You get to frost more cake/cupcakes with the same amount. You also eat less sugar/calories per serving."
I did this one tonight and it works... but now I'm left with a ton of leftover frosting that I don't know what to do with. Can I freeze it? Will it thaw ok? I'm sure I'd need to re-whip it when thawed.... has anyone done this?

Thank you for the tip and for asking this question, I too would like to know if you can freeze the unused portion and use it later. I have thought about doing it, just not sure how it would turn out. If anyone knows the answer please let us know.

you can freeze frosted cookies and cakes so i would guess you could freeze the icing alone. it may take a while to thaw though. not sure what it will do to the consistacy though.
