    I don't know...maybe if each meal was different. They say you have to have 3-5 servings of fruits/veggies a day, so you'd definitely have to be careful of that. I've done the meat and two veggies thing for years, though, and nobody died of malnutrition.

    I also tend to cook "simply." Cooked meat (love that little forman grill), a veggie or two, and a starch. No frills. There are occassions when a sauce gets made or the meat gets a dry rub or marinade.

    I think it could be done though I prefer more fruits and veg. A veg,starch and protein is a pretty basic casserole recipe. Some things that come to mind.

    Ramen noodle soup with carrots&peas
    Macaroni&cheese w/ground beef (or beans)and corn
    tator tot casserole w/green beans
    baked potato, broccoli&cheese
    cooked pork and peppers in a tortilla
    eggs&peppers in a tortilla
    pbj and a banana
    meat&cheese sandwich
    rice,beans, and tomatoes
    oatmeal, raisins and milk
    chicken, pasta and broccoli(dress w/garlic and olive oil)
    pasta with any two veggies
    potato,eggs and peppers
    hamburger, mixed veg and tomato juice soup
    Mom to Emma, Spencer, Connor, Lily,Fletcher, Amelia and Adeline.

    That is what we do most of the time, too. Grilled chicken breast with brown rice and some steamed veggies, or cheese omelets with whole wheat toast and fresh fruit, sometimes we will have oatmeal with peanut butter stirred in for dinner! We only eat meat about three evenings a week. Beans, cornbread and coleslaw is another good one.

    My crew would not be able to do it. Dinner is normally a meat with three side items, a bread and a desert.
    Lunch and breakfast would not be too difficult though.

    Yes, it can be done. Yes, I have done it. Did I get bored? You betcha! But you got to do what you got to do!

    One tip is to keep anything "special" you may have on hand or in the freezer for when you can't take it anymore. Then pull it out when you are desperate.

    Some of our dinners were-
    Tomato sauce/with hamburger
    Pasta
    broccoli

    Fried eggs
    hasbrowns
    fruit

    Spiced red beans
    Brown Rice
    corn

    Lentil/brown rice casserole
    Steamed carrots

    Sloppy joes (tomato soup plus hamburger, brown sugar)
    on homemade buns

    cheese perogies with fried mushrooms and onions

    cheese pizza (homemade crust) with carrot sticks

    Baked beans and eggs on toast

    Grilled cheese and tomato soup

    Porkchops or chicken coated with homemade shake and bake and served with homemade french fries (plus a veggie for a fourth ingredient).

    Roasted Chicken/ turkey/ roast (what ever was cheap and I could get my hands on).
    Roasted potato
    peas

    Well I can go on but you get the point.

    Special treats were- Popcorn balls, homemade sugar cookies or ginger drops(cheapest kind of cookies) etc.

    In The Rose Years (Laura Ingalls Wilder's daughter) when they moved to Missouri to set up a homestead they came with a sack of cornmeal, a sack of beans and a slab of salt pork. That was what they ate for the whole winter. They were so happy come spring when greens became available.

    I would think if you popped a multivitamin pill it will cover any mineral deficiencies caused by limited meal ingredients.

    It doesn't fix any protein or carbohydrate deficiencies though.
