Ack! Need help on a dessert for Sunday!
Ok, the witch sister (when you read that, replace the "w" with a "b") called yesterday and told me that I need to bring a dessert for Easter. Oh yeah... This needs to be enough for 25 people. And, I have to drive for an hour and a half to get there. I don't want it to be stuff that will spill.
Someone else is bringing brownies, so that is out. Sis suggested a fruit salad, but I have no clue what goes in one and I don't have the stuff for one (don't really want to go buy the stuff either) and I could see it spilling in the trunk. I only trust rubbermaid so far.
I was thinking vanilla brownies (sort of my "signature" thing that I always bring). I was also thinking of cupcakes maybe. I have apples and I could make homemade applesauce and make something with it. Ooo... Maybe and apple crisp or crumble (basically applesauce with struesal topping on it and baked in the oven).
Oooo.... I could make a dessert pizza with pizza dough as the crust (you add in a bit of sugar to make it a little sweet). You spread on applesauce (would make homemade, of course) and then you sprinkle on a struesal topping and bake.
Oh yeah, when I make struesal topping, I use brown sugar in it and a dash of cinnamon. OMG, it makes it heavenly.
Ok, so which choice sounds like a good one? I need it to be a sort of fancy dessert, but I also need it to not be too spendy and I need it to feed a ton of people.
**big sigh** I hate this stuff!

A fruit salad isn't hard nor is it specific in what goes in it. You would just cut up what ever fruit you have in the house into bite size pieces (you can even add things from a can like pinapple chunks). Then stir it with a couple of tsps of lemmon juice. Then add some yougurt or a box of vanilla pudding to coat like you would slaw. You can even add marshmellowa or coconut.
The struddle sounds good though. i'm a sucker for stroddle.

I'd pick the fruit pizza, personally. You can also do one using sugar cookie dough (a store-bought roll or homemade) and using fruit-flavored cream cheese, then topping with whatever fruit you have on hand. I'd pick this just because it can be cut into small pieces and stretched to feed however many are needed.

I'd opt for a sheet cake, they feed a ton of people and you can do just about anything with them. Your sil IMHO was out of line calling you so late with her request.

That dessert pizza sounds heavenly! I'd do that one. And if she says anything derogatory about it, tell us at FV and we'll all come over and give her a piece of our minds.......

My vote would be for the apple crisp.
Or you could try this recipe. It's like apple pie only better and in bar form.

You could make marshmallow Peep cupcakes
. I'm making these for tomorrow's treat. Cupcakes decorated with peeps. It's pretty easy and would make 24-30. I got the idea from the Marshmallow Peeps website. You could also make a sheet cake and decorate with peeps (easier for transport).

I love the Peeps idea, but the peeps all have dye on them. One of my boys has a special diet and can't have the peeps.

How about Easter basket cupcakes? Can your son have food coloring? We tint coconut green with food coloring for the grass and use pipe (smoking pipe) cleaners we get at Kmart for the Easter basket handles. You could always give your son a cupcake with plain coconut that you have not died. One cake mix will make 24 or more cupcakes. Here are photos:http://images.google.com/images?hl=e...h+Images&gbv=2

Chocolate dipped fresh strawberries are heavenly. Just melt some semi-sweet chocolate in the microwave, dip whole strawberries (leaving the stem and leaves on, so you have something to hold on to) you don't have to cover the entire berry with chocolate, just the bottom 2/3 or so. Lay on wax paper to set. Once chocolate is set, you could transfer to a Rubbermaid or Tupperware container, but I would put these in a cooler for the trip. Berries AND dark chocolate are full of anti-oxidants!

I made a test dessert pizza. All four boys (DH and the three kids) said that it was heavenly. I had the neighbor boy try it too and he said that it was good too.
On his special diet, all dyes and corn syrup are out. So, all those really really cool desserts are out. But, I get creative and do things like the dessert pizza. He still gets treats and we all eat healthier in the long run.Beak-1996, Toad-1998, and Q-1998
