Double Chip Cookie Mix
1 cup plus 2 T. all-purpose flour
1/4 tsp. baking powder
1/8 tsp. salt
1/2 cup chopped pecans
1/2 cup white baking chips
1/2 cup semisweet chocolate chips
6 T. firmly packed light brown sugar
6 T. granulated sugar
In a small bowl, combine the flour, baking powder and salt; blend well. Spoon the mixture into a wide-mouth 1-quart jar with lid. Layer pecans, white chips, chocolate chips, brown sugar, and granulated sugar in the jar. Cover with the lid and give as a gift with baking instructions.
To bake: Heat oven to 350 degrees. Pour the cookie mix into a med. bowl and stir until ingredients are blended well. In a small bowl, combine 1/4 cup vegetable oil, 1 egg, 2 T. milk, and 1/2 tsp. vanilla extract; beat until blended. Add the mixture to the dry ingredients and stir until a soft dough forms. Drop by rounded teaspoonfuls 2 inches apart onto a greased baking sheet. Bake for 8 to 10 mins. or until edges are lightly browned. Transfer to a wire rack to cool. Store in an airtight container. Makes 3 dozen cookies.
