Fish-Fry Seasoning Mix
Fish-Fry Seasoning Mix
2 cups yellow cornmeal
1 cup all-purpose flour
2 tsp. paprika
1 tsp. dried parsley flakes, crushed
1 tsp. salt
1 tsp. celery salt
1 tsp. onion salt
1 tsp. lemon pepper
1/2 tsp. ground red pepper
Combine all ingredients and mix well. Store in a resealable plastic baggie. Give as a gift with serving instructions.
To serve: Heat about 1 1/2 inches of vegetable oil to 375 degrees in a deep skillet. In a small bowl, combine 1 egg and 1 cup buttermilk. Dip the fish into the buttermilk mixture. Place in the bag of seasoning mix and shake until the fish is well coated. Repeat for each piece of fish. Fry until fish is golden brown and flakes easily with a fork. Drain on paper towels and serve warm. (Coats about 4 pounds of fish).
