Pancake Mix
8 cups all-purpose flour
2 cups buttermilk blend powder
1/2 cup sugar
8 tsp. baking powder
4 tsp. baking soda
2 tsp. salt
Combine the ingredients and store in an airtight container in the refrigerator for up to six months. Give as a gift with serving instructions.
To serve: Combine 1 egg, 1 cup of water, and 2 tablespoons of vegetable oil in a medium bowl; beat together. Whisk in 1 1/2 cups of pancake mix. Let stand for 5 minutes. Pour batter by 1/3 cupfuls onto a lightly greased griddle; turn when bubbles form on top of pancakes. Cook until golden brown on both sides. Makes six pancakes.
Makes enough mix for 7 batches (six pancakes in each batch).
