Oatmeal Cookie Mix
3 cups all-purpose flour
2 1/2 cups sugar
2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 cup shortening
3 cups quick cooking oats
Combine the first 5 ingredients; cut in the shortening until crumbly. Add the oats and mix well. Store in an airtight container in a cool dry place for up to six months. Give as a gift with serving instructions.
To serve: In a mixing bowl, combine 2 cups of cookie mix with one egg, 1 tablespoon of milk, 1 teaspoon of vanilla extract, and 1/2 cup of semisweet chocolate chips. Mix well. Drop by tablespoonfuls 2-inches apart onto greased cookie sheets. Bake at 375 degrees for 10 to 12 minutes or until golden brown. Remove to wire racks to cool. Makes 2 1/2 dozen cookies.
Makes 10 cups of mix (5 batches of cookies).
