Oatmeal-Raisin Cookie Mix
Oatmeal-Raisin Cookie Mix
1 1/4 cups all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1 cup quick cooking oats
1 cup raisins
1/2 cup flaked coconut
1/2 cup firmly packed light brown sugar
1/2 cup granulated sugar
Combine the first 3 ingredients and mix well. Spoon the mixture into a wide-mouth 1-quart jar with a lid. Layer the remaining ingredients into the jar. Cover with the lid. Give with baking instructions.
To bake: Preheat oven to 350 degrees. Pour the cookie mix into a large bowl and stir until ingredients are well blended. In a small bowl, combine 1/3 cup vegetable oil and 2 eggs; beat until blended. Add the oil mixture to the dry ingredients; stir until a soft dough forms. Drop teaspoonfuls of dough 2-inches apart onto a greased baking sheet or shape dough into 1-inch balls and roll in granulated sugar. Place balls 2-inches apart on a greased baking sheet; flatten with bottom of a glass dipped in granulated sugar. Bake 8 to 10 minutes or until bottoms are lightly browned. Transfer to a wire rack to cool. Store in an airtight container. Makes about 4 dozen cookies.
