Pancake Mix
Pancake Mix
10 cups all-purpose flour
2 1/2 cups nonfat dry milk powder
1/2 cup sugar
1/4 cup baking powder
2 T. salt
Combine all ingredients in a large bowl and mix well. Store in an airtight container in a cool dry place for up to 8 months. Give with serving instructions.
To serve: Combine 1 1/2 cups of pancake mix with 1 egg (slightly beaten), 1 cup of water, and 3 tablespoons of vegetable oil. Mix well. Add more water for thinner pancakes and blend well (if desired). Let mixture stand for 5 minutes. Cook on a hot greased griddle for 3 to 4 minutes until golden brown on both sides. Makes 10 to 12 4-inch pancakes.
Makes about 13 cups of mix.
