Default Vanilla Cookie Mix

Vanilla Cookie Mix

8 cups all-purpose flour
2 1/2 cups sugar
2 cups firmly packed light brown sugar
4 tsp. salt
1 1/2 tsp. baking soda
3 cups vegetable shortening

In a large bowl, combine the first 5 ingredients and mix well. Cut in the shortening with a pastry blender until evenly distributed. Store in an airtight container in a cool dry place for up to 10 weeks. Give with instructions.

To serve: Preheat oven to 375 degrees. Lightly grease baking sheets. In a large bowl, combine 3 cups of cookie mix, 3 tablespoons of milk, 1 1/2 teaspoons of vanilla and 1 egg. Mix well. Drop by teaspoonfuls onto prepared baking sheets. Sprinkle with sugar if desired. Bake to 10 to 15 minutes, until edges are golden brown. Makes 2 dozen.

Makes 16 cups of mix.
