Reindeer Nibble Mix

2/3 cup peanut butter
2/3 cup honey
1/2 tsp. cinnamon
1 tsp. vanilla
4 cups regular oats
1 cup unsalted peanuts
1 1/2 cups raisins.

Spread the oats out in a jelly-roll pan and set aside. Combine the first 3 ingredients in a saucepan and heat thoroughly, but do not let boil. Add the vanilla and pour the mixture over the oats, stirring to evenly coat. Bake for 35 minutes at 300 degrees, sitrring occasionally. Add the peanuts and turn off the oven; let the mixture cool in the oven for 1 1/2 hours, stirring occasionally. Remove from the oven and stir in the raisins. Makes 8 cups of mix.
