Vegetarian Mexi-Burger Recipe
I found this great recipe for Mexi-Burgers while surfing the web. They have no meat so if you like "meaty burgers" this would probably disappoint you (my fiance did not like them because he's a huge meat eater). However, they are great for people looking for a meat free meal during the week and don't mind a meatless burger. They had a lot of flavor and were filling

Recipe:
1 15oz can black beans rinsed and drained in a strainer
2 servings brown rice (1 cup rice & 1 cup water using minute rice)
1/4 of a onion minced (I used a red onion)
3 Tblsp Ketchup
1-2 tsp. Chili Powder
1/2 tsp Garlic Powder (I used one clove of garlic minced)
1/2 tsp. Ground Cumin
salt & Pepper to taste (I used a pinch of each)
Combine all ingredients in a large bowl. Mash with a potato masher until beans are mashed well and mixture is thouroughly combined.
Divide mixture and form into 4 patties. Lightly oil a non-stick griddle (I used cooking spray to coat the griddle). Cook until browned on both sides and heated through.
I served these on whole wheat hamburger buns with hamburger toppings: lettuce, tomato, mustard, ketchup.

I'm going to have to try that.
Did they hold together okay? I've been hesitant to make my own veggie burgers because I've been told that they fall apart really easy.

Hi,
I make veggie burgers/falafel burgers all the time and they don't fall apart. Once everything's been in the mixer/been mashed the consistency is good for sticking together and remaining firm. The ketchup should give this recipe enough moisture to help everything stick!

Depending on the recipe, sometimes whole wheat flour will keep them together.

I wonder if another type of beans could be substituted for the black beans [not sure why but just looking at black beans grosses me out.

It sounds really good. A couple of weeks ago I made chick pea burgers and they were not good, but I will have to try these because I am stll looking to make my own, so much cheaper.

Hi,
I always use this recipe for chickpea burgers -
FOOLPROOF FALAFEL BURGERS (from BBC Good Food)
2 x 400g can chickpeas, drained and rinsed (or I use 1 chickpeas and 1 other beans)
1 small onion, cut into chunks
handful parsely leaves
zest and juice of a lemon (I usually just use jif lime juice from a bottle though!)
2tsp each dried cumin and coriander
6tbsp plain flour plus extra for dusting
4 tbsp olive oil
burger buns and fixings.
Put the chickpeas, onion, parsely, lemon, spices and flour into a food mixer, season to taste. Pulse the mixture until it's a chunky paste.
Tip the mixture onto a floured board and form into patties. Dust each one with a little flour and fry in the oil for 2 minutes each side, until crisp then serve.
For other bean burgers I just use whatever beans we have in and they usually turn out alright! I also vary the spices in the chickpea burgers depending on what kind of mood I'm in.
