My favorite vegetarian meal is mushroom, onion and garlic bowties.
Click on my recipe for the info on it. I used chicken broth but you can use vege broth.

I take an onion, a bell pepper, a zuke or two or even yellow squash, mushroom, and a tomato... all sliced and diced... and sautee in butter. Then pour over hot noodles and sprinkle with parmesan cheese. YUM!
It's one of the few meatless meals dh actually likes and requests.... well, other than beans and cornbread but the beans are seasoned with bacon so that doesn't really count, does it?

Good idea for a thread! Some of the favourites in our house are -
rooty chestnut pie (walnut shortcrust pastry with chestnut, parsnip, carrot and beer filling)
potato strudel
vegetable cobbler (afaik that would be like biscuits)
shepherdess pie
bobotie
risotto
roast veg pasta
winter veg ratatouille
spaghetti with garlic mushrooms
saucy potato galette
falafel
thai sweetcorn cakes
noodles in their various guises
nasi goreng
curries of all different types - from hot and tomatoey to cool and coconutty
chilli bean bake
tagine
stuffed peppers
pizza
and so on! lol

There are so many, but these are the ones I make most often:
chickpea tacos
tempeh "cheesesteak" sandwiches
grilled veggie sandwiches with feta and aioli
tvp "meatball" subs
quiche
creamy lemon pasta with veggies
risotto
tofu "BLT's"
rice & bean casserole
soups
veggie wraps with hummus
I can post recipes for any that interest you.

Vegetable lasagna with squash, zucchini, mushrooms and broccoli (no onions or peppers) is my #1 favorite.
I also love to cook some sliced onions in butter and garlic salt, put it on a deli roll with a tomato and feta cheese.
BBQ burger(soy) pizza - pizza dough, spread BBQ sauce, add Morningstar Farms crumblers, cheddar cheese, mozzarella cheese mushrooms and cook. I double the amount of dough and make it deep dish style.
A big pot of Chili made without real meat or with crumblers served over rice.DD (19)

Me thinks we need a vegetarian section in the recipes forum.

I know we have a "budget" section, but sometimes even vegetarian foods wouldn't be considered low cost, kwim?Michelle in middle Tennessee!

OK, I really cheat, big time.
~Casserole dish, sprayed with non-stick cooking spray
~Slightly steam squash, zucchini, carrots, broccoli, cauliflower
~Cover bottom of casserole dish w/uncooked lasagna noodles. I get the quick/easy cook kind that do not require any boiling. Just the kind you run under hot water for a minute then bake.
~next add mozzarella, sauce (here is my big cheat - I just used store bought spaghetti sauce), steamed veggies, mushrooms(canned because like I said, I cheat) and ricotta (sometimes - if I remember to buy it).
~repeat the layers over and over
~cook according to the directions on the package that the noodles came in (I think it is like 20-30 minutes).
~Then I add some extra mozzarella to the top and pop back in the oven for just a minute or so, until that cheese melts.
The taste all depends on the spaghetti sauce, IMO. If I use a sauce that has a great flavor, it turns out delicious. If I use a sauce that is a little bland, I end up having to add salt, garlic and other seasonings while I eat it.DD (19)
