    anything cheesy is sure to be a hit with kids. as many have suggested: cheesy pizza. there's always my favorite: grilled cheese and tomato soup. quesadillas are a HUGE hit with kids. you could also do goulash, veggie & pasta soup. any pasta! (of course, mac & cheese) and nachos with refried beans!

    Greek Pasta Salad is a favorite of my kids - pasta, zesty italian or greek dressing, feta cheese, olives, red onion or green onion, cuke, tomatoes, carrots, and red peppers. Fresh parsley and/or basil if you have it. I usually don't put in all the veggies but this is my complete list! Picky eaters can pick out the veggies they dont like - mine did this when they were little but now they eat it all.

    They will survive a weekend without meat, I wouldn't rush out and buy it, either. Hm, I say that but I'm not a grandparent yet, maybe I would, ha!

    You have been given a lot of great substitutions, I'm going to borrow the ideas for myself. Meat is expensive, am trying to pull away from so much of it in my diet.
