The older I get the more I realize what foods I should not eat. Now it feels like my world of food is shrinking. Like hearing other peoples ideas for vegan dishes.

I've just started the PCRM 21 day Vegan Kick start programme so will be looking at this thread with interest. Thank you for the recipes so far. I've not eaten meat or chicken for some time now but have still been eating dairy, fish and eggs. I think subsituting eggs in my beloved baking might be the hardest thing to cope with.
I'm still cooking normal omni meals for the family but aim to have two family vegi meals a week which should also help the budget.
Sara I'm tapering down my coffee as I don't like it black and can't come to having soy milk in it. It will take a few weeks but hope to be finally free of my caffeine addiction soon!"Too many people spend money they haven't earned, to buy things they don't want, to impress people they don't like."

Thank you Dancing Lotus and Happy Mama! I had been thinking coconut milk in coffee. We don't have that coconut creamer here (I'm Aussie!) but where I live we have loads of coconut palms so fresh coconut milk might be the go. Although saying that I'd really like to give up coffee so maybe I'll just do the coconut milk on my porridge instead!

Hope you like it fresh coconut milk with no preservatives is the best....so yummy. I make my own or use Thai Kitchen as it has no preservatives but guar gum. I eat a lot of raw ( took raw chef classes years ago, lots of vegetarian though my family does have meat in theirs mainly chicken) but can't and won't live without my honey....lol
So my lattes or coffees have coconut milk and honey. So yummy !!

Congrats on joining the club! You'll love it.
My advice, continue to eat what you've been eating only veganize it. You can veganize anything. Just substitute a vegan product for the meat/dairy/eggs.
Cookies are BETTER when you substitute 1/4 cup unsweetened applesauce for each egg.
Soy milk instead of regular milk.
There are vegan substitutions for everything including:
chik'n
ribs
burgers
cheese--much better lately than when I became vegan
ice cream
sausage
eggs--scrambled tofu rocks!
butter
sour cream, etc.
Scrambled Tofu
1 lb extra firm tofu--drained
1 c. frozen spinach-chopped
1/2 medium yellow onion-diced
1/2 red pepper diced
tumeric
soy sauce
olive oil
crushed red pepper
garlic powder
Saute onion and pepper in about 2T of olive oil until translucent. Add crumbled tofu and brown. Sprinkle with about 2T soy sauce 1/4t tumeric, 1T garlic powder, crushed red pepper to taste and toss in spinach and heat through.
I never really liked scrambled eggs without a bunch of cheese and ham to cover up the egg taste but I love this recipe and make it a lot.
