    Question Do you have any vegetarian recipes you'd like to share here?

    I'd lot to see some here. I'm always interested in eating healthier and I'm always on the lookout for vegetarian recipes.

    How about posting some here.

    Your not being difficult at all. I can see this thread getting awfully long if we posted them all here...

    Ok here is my grandma's recipe for oatmeal patties (although not sure if it was 'hers' or betty crockers)

    2 eggs
    1 med. onion
    1 cup rolled oats
    1 cup fine ground walnuts
    salt, sage to taste
    1/4 cup cream(here I'm not sure what kind of cream I think you could use cottage cheese, or cottage cheese and sour cream..but I always just use cottage cheese)

    Beat eggs and combine all other ingredients with them. Drop from spoon to form small patties and brown and both sides in oil. Cover with gravy(mushroom sauce) Simmer 45 minutes or 1 hour on top of stove or oven.

    Eggplant Casserole

    1 large eggplant
    1 onion, chopped
    1 egg, beaten lightly
    1 cup milk
    1/2 cup saltine cracker crumbs
    1/2 cup Cheddar cheese, grated
    1/2 tsp. Worcestershire sauce
    salt and pepper, to taste


    Peel eggplant. Slice or cube. Soak in salty water for 30 minutes. Drain. Cook in boiling water until barely tender. Drain thoroughly.

    Beat egg. Add milk, Worcestershire sauce and salt and pepper to taste. Add eggplant, onion and half of the cracker crumbs. Mix together. Pour into buttered 1-1/2-quart casserole. Sprinkle with remaining cracker crumbs and grated cheese. Bake at 375 degrees for 30--40 minutes.
