Homemade Veggie Burger: Broccoli Burger

2 large eggs
1 cup chopped broccoli
1/2 cup chopped toasted almonds
3/4 cup chopped red onion
1/2 cup seasoned dry bread crumbs
1/4 cup water
Salt and pepper, to taste
Toasted buns or bread
Mayonnaise
Lettuce

In bowl beat eggs to blend. Stir in broccoli, almonds, onion, bread crumbs and water. Add salt and pepper to taste. On an oiled 12-by-15-inch baking sheet shape mixture into 4 patties each 3/4 inch thick. Bake in 375-degree oven, turning halfway through cooking until each side is golden brown, about 25 minutes total. Serve on buns with mayonnaise and lettuce.

Makes 4 burgers, each: 165 calories, 7 grams protein, 11 grams fat, 11 grams carbohydrates, 4 grams fiber, 90 milligrams cholesterol, 62 milligrams sodium.

Basic Dry Cereal Formula

Recipe By : the More With Less Cookbook by Doris Janzen Longacre
Serving Size : 1 Preparation Time :0:00
Categories : Vegetarian Vegan
Breakfast Grains


3 c rolled oats
4 c other grains -- see Directions
1 c liquids -- see Directions

Grains: rolled wheat or barley, wheat germ, whole wheat flour, wheat bran, wheat grits, cornmeal, soy flour, soy grits, grapenuts, dry milk solids,

spices--cinnamon, nutmeg, etc.

Liquids: honey, syrup, molasses, brown sugar (use 2 T water with 1/2 c sugar), fruit juice

Combine dry ingredients in a large bowl.
Combine liquid ingredients in a separate bowl, and pour over dry ingredients.
Bake in large greased baking pans 30-60 minutes at 275F, stirring often.
Do not overbrown.
Crunchiness depends on proportions and baking times.
For a chunkier cereal, allow to cool undisturbed, then break into pieces.
Add when cool,as desired: raisins, chopped dates, dried apples or other dried fruits.

Oat Walnut Burgers
4 cups water
1/2 cup Braggs (or soy sauce ) I usually use( 1/4 cup)
1cup finely chopped walnuts
1/4 cup nutritional yeast
1T.basil
1tsp.onion powder
1tsp. garlic powder
1tsp. sage
1tsp coriander (i dont use this)
4cups rolled oats

Combine all ingredients except oats in a sauce pan and bring to a boil.Stir in oats. Remove from heat and set aside until cool. Make 1/4-1/2 cup sized patties. Bake on oil cookie sheets for 12-15 minutes at 350

No Bake Chocolate Oatmeal Cookies
Ingredients
2/3 cup maple syrup
1/4 cup vegetable oil
5 tablespoons unsweetened cocoa powder
1 teaspoon ground cinnamon
1/2 cup peanut butter
1 cup rolled oats
1 teaspoon vanilla extract


Directions
1 In a saucepan over medium heat combine the maple syrup, oil, cocoa and cinnamon. Boil for three minutes, stirring constantly. Remove from heat and stir in the peanut butter, rolled oats and vanilla until well blended. Drop by heaping spoonfuls onto waxed paper and chill to set, about 30 minutes.

Bean and Rice Burritos

1 cup (uncooked)white rice
1 can black beans, drained
1can mexican corn, drained
1 jar salsa (a small jar like Ortega)
1 package burrito size flour tortillas
1 package shredded cheese (cheddar, mexican blend, or whatever you prefer)
salt, pepper and cumin to taste

Cook 1 cup rice according to package directions. Add beans, corn, salsa and spices to taste and heat on low until everything is heated through.

Put about 1/4 C of the rice mixture on each tortilla and sprinkle on some cheese. Fold in one end of the tortilla and roll it up, so only one end of the burrito is open.

Serves 4

East Black Bean and Tomato Chili

Brown a chopped onion and a dash red chili flakes in a little oil.

Add one can each:

Black Beans, drained (19 oz. can)
Chili Style tomatoes (19 oz. can)
Whole Kernal corn (12 oz. can)

Simmer, uncovered until heated through. Once cooked, top with shredded cheese and light sour cream.

This recipe can be doubled!!
