    Default Any good vegetarian recipes?

    hi! I am going on 11 years of not eating meat!
    i do eat eggs and milk products, but no meat, fish, or poultry.
    If you have any recipes, please share! I will do the same! thanks

    Hi, I am trying to be more vegetarian like this year. Sound lame I know. I have given up red meat and pork and have been incorperating more soy into my diet. I am doing it more for health reasons (heart disease runs in my family) than for animal rights reasons.

    My favorite site for recipes is www.fatfree.com . They have a ton of lowfat and fatfree veggie stuff for vegan and nonvegan.

    good for you! Soy is very good for you! When I first started out it was for the animal's right reasons (hey I was 12! what do you want form me...lol)Now i'd throw up if I ate meat! I can cook it for people, but I can't eat it!

    Here's one:

    Unsloppy Joes

    1 tablespoon olive oil
    1/2 cup onion -- chopped
    1/2 cup celery -- chopped
    1/2 cup carrot -- chopped
    1/2 cup green pepper -- chopped
    1 clove garlic -- minced
    1 14.5 oz. can diced tomatoes
    1 1/2 tablespoons chili powder
    1 tablespoon tomato paste
    1 tablespoon vinegar
    1 teaspoon pepper
    1 15.5 oz. can red kidney beans -- rinsed & drained
    8 2.5 oz. kaiser rolls

    Heat olive oil in large skillet. Add onion, celery, carrot, green
    pepper, and garlic and saute until tender. Stir in tomatoes and next 4 ingredients.
    Cover, reduce heat, and simmer 10 minutes. Add kidney beans and cook and additional 5 minutes.
    Cut a 1/4" slice off the top of each kaiser roll; set aside. Hollow
    out the center of each roll, leaving about 1/2-inch thick shells; reserve the inside of rolls for other uses.
    Spoon bean mixture evenly into rolls and replace tops. Serve
    immediately.

    We had a great really quick, meat- free dinner last night:
    I sauteed one chopped eggplant (peeled) in olive oil , 2 cloves of chopped garlic, raw broccoli, fresh carrot slices with s bit of low salt soy sauce. Serve over angel hair pasta. Dh loved it and didn't notice that there wasn't meat!
