Bean there, doing that! Vegan foodie things!
Well, I have been experimenting ( as usual
....only this time with food
I am self taught and don't tend to use recipes except for a rough idea of what I would like to make!
So here are some VERY cheap ideas that you can use if you choose
To make life easy I have a stash of beans that I have rinsed soaked ( overnight) rinsed once or twice more & then boiled for 20 mins.
My favourite beans are Mung Beans and Chick peas....
Beany Burgers
To any Lawyers, this is how I do it and it worked for me, so
here goes..........
1 cup of chick peas
2 cups of mung beans
1/2 cup of tofu
1 tablespoon oil
add spices of choice ( I use a LOT about 1/4 teaspoon of 4 or 5 different ones)
Blend all together until a nice big messy damp mush
Then I mix flour & bread crumbs on my work top and make a ball of the mixture into a patty ( or burger as we say
.....)
lightly fry in a little oil and serve with pickle/salsa or spicy mix of your choice.
EAT THE SAME DAY
To Make FREEZABLE VERSION:
as above but omit Tofu and replace with 1/4 cup of GRAM FLOUR ( also known as CHICK PEA flour)
plus 1 EXTRA table spoon of oil and
2 or 3 tablespoon water ( until mixture is damp and "workable")
Can be frozen and then cooked from frozen OR cooked then frozen and re-heated.
FAKE FISH Cakes
1 cup Chick Peas
3 cups Mung beans
1 cup of Dixie diner cooked faux Tuna ( carnivores and fishtarians can use real Tuna
.........)
1/2 cup of mash potato
OR 1/4 cup dried potato flakes
2 tablespoons oil ( I use olive)
THEN if eating same day use 1/2 cup of Tofu
OR if freezing 1/2 cup of Gram flour plus 1 extra tablespoon of oil and 2 ( or more tablespoons of water)
3 Teaspoons Parsley
Black pepper to taste
in EACH case
again take a "ball of the mixture" and turn onto a floured/breadcrumbed mix counter top
form into patties
Fry in small amount of oil ( just enough to coat the patty really)
Serve hot!
MY DH is crazy about the Tofu Version of The Faux Fish cakes and would eat it many times a week, if I wasn't making him eat all my other cooking experiments LOL!
You can increase the amounts in equal proportion, in order to make a bigger batch if you wish.
