    Tonight I'm making the 0 Point Weight Watchers Soup, which always knocks my socks off. I still can't understand how cabbage soup can be so good!

    For quick after work meals here are a few recipes I fall back on: Fried Tofu, Fried Rice, Baked Tofu Strips, and these simple Portabella "Pizzas".

    Another vegetarian here. I would love to learn ways to make tofu taste great and kinds of marinades to use. I agree the 0 point soup is great.

    I'm still an occasional chicken eater, but DH and my kids are all vegetarians.

    I have to say I am not much of a tofu eater and have tried it many different ways. Going to have to try that 0 point cabbage soup though. Thanks.


    Blitzen, how does that work in your house as far as cooking goes? I admit I end of cooking different meals for me and my family and it can be a pain.

    Looking for more veggie recipes that will please my meat and potatoes lover dh and to keep it simple.

    If you are getting to know tofu, marinating and scrambling it are the best ways to try it...I think.

    My favorite way is to marinate tofu in a mixture of equal parts ketchup, soy sauce, and oil. Sometimes I'll add summer squash and zucchini, then throw it on the george foreman grill. It's awesome served over rice.

    For a scramble, this one blew me away.

    My favorite tofu marinade is tamari (soy sauce), vegetarian worchestershire sauce and olive oil. It is so delicious! Have some marinading in the fridge right now as a matter of fact!

    It's not too bad. I'm not a big fan of cooking multiple meals, so I save my chicken for the days I can incorporate in with whatever else we are having. For example: tacos. DH likes grilled vegetable tacos, so if I'm in the mood for chicken tacos, I'll make some chicken. Or, I'll make chicken fingers and a variety of side dishes that the rest of them will eat too. I only each chicken once or twice a month so there isn't too much conflict. My bigger problem is that my older son is an extremely picky eater and likes nothing! I'm a picky eater too, but he's really bad!

    We love any type of fajitas or stirfry. Those days work because I just make the meat in another pan. Things like tacos, spaghetti and stuff like that seem to work here. I sure know what you mean about pleasing the kids. That is a tuff job.lol

    That is cool that it works that easy for your family. I am seriously looking for a better system here. lol.

    I'm thinking some good hearty Mexican dishes might please them without the meat.

    I'm a vegetarian and so is my husband!

    I've got a ton of recipes, but one of my favorite quick ones is chickpea tacos.

    I cook 3 cups of chickpeas and 1 cup of their cooking liquid in a frying pan with a packet of taco seasoning, until most of the water evaporates. Then serve them with the usual taco fixins.

    I pressure cook my chickpeas in bulk because it's cheaper than using canned, but the equivilant is 2 15 oz. cans.

    I'm not a "true" vegetarian, but I sure could be if the rest of my family made it the least bit easy. Here's my lunch I threw together for my daughter and I:
    2 cans of greens beans
    1 can black beans drained
    1 handful whole wheat pasta, cooked
    1 can muir glen fire roasted tomatoes
    I can of tomato paste
    italian seasoning

    that's it...my family would never go for it, but she and I will eat on it for a few days for lunch!

    You are lucky there! I keep wanting to try like that mock chickpea recipe that is like tuna salad. Your post reminded me of that.

    I heart chickpeas. I usually just buy those in a can though. I do almost the same as you but use black beans instead.

    So I always hear this is good....

    Smash chickpeas, add relish, mayo, celery or onion, or whatever you like for your "tuna sandwich." Just use the beans instead.

    I understand that. I think a lot of people just go with the flow or what makes it work with their family.

    That doesn't sound bad.. It's amazing what you can eat with pasta or a tortilla wrap. Thank you for posting that.

    This is something from the top of my head that I think I will just whip up this week, just going from what I have in the pantry. I think maybe dh might like it.

    Sautee' onion, garlic, and corn in EVOO(aren't you glad Racheal Ray got that in the dictionary now. lol) I have a big can of pinto beans, green peppers cut up in the freezer, add taco seasoning, chopped tomatoes, and maybe some tomato sauce. Simmer. I have quac in the fridge. I just discovered this weekend that Aldi's carries this here in sealed packets. Perfect for the addict like me. :p Add sour cream, salsa, and cheese that I have and make it a big wrap. I would serve it with some rice on the side.

    I think that would be filling to the biggest meat hard core of a dh I have. lol

    Fellow vegetarian here...for about 7 years!!

    I love my panini grill! One easy, quick and healthy dinner I like to make is...I saute' spinach leaves in a olive oil. In a wrap (usually a flavored one), I combined grilled tomatoes, sauteed spinach and cheese...then put the wrap in my panini grill....it makes a quick, hot meal. I like to dip it in dijonaisse/dill. yummm....

    Sometimes just a cheese/tomato wrap cooked in the panini grill is tasty too. I like to cook simple things...


    Thanks for the other veggie recipes in this threat! Can't wait to try some. Yes...chickpeas rock!!
