Low Cost Diabetic Recipes

About 6 months ago I was diagnosed with Type 2 diabetes, through the use of diet, exercise, and Metformin, my Fasting BG has been averaging in the mid 90's for the last couple of months.
However, due to rising food/gas prices, we have had to reduce our grocery budget, and I am starting to notice a slow increase in my fasting BG to the mid 100's, I don't like this trend and want to stop it.
My grocery budget is $100 every two weeks (for 2 people and 1 large dog), this includes non food items like tp, dog food etc.

Does anybody have any low cost recipes that are diabetic friendly? I seem to be able to handle some pasta like spaghetti and macaroni in small amounts, egg noodles do seem to spike my BG. White rice also spikes my bg, but I ate a small amount of brown rice a few weeks ago and it didn't seem to do much to me.

I picked up the free magazine "Diabetes & You" from Walgreen's just this afternoon to share with someone I care about. There are a couple of recipes and tips in the magazine.

Here are some recipe titles:
Roasted Catfish with Cumin Sweet Potatoes (looks good!0
Italian Potato Dumpling Casserole (looks like lasagna but uses gnochi instead of pasta)
Crab Cakes


I would think with fresh veggies coming in to season they would be great for your diet. Hubby suggests checking out Jerusalem Artichokes because they are said to regulate your blood sugar and are a carb you can eat. They are easy to grow and, though they are ugly, they are pretty tasty.
