That's a good idea! You know, maybe I can find a healthier carrot cake recipe on the net. My recipe, while wonderful, is CRAZY high in calories and sugar. Off to go hunt.

I think your smoothie sounds wonderful! What's it like with the coconut?
So I hunted, and hunted, but I just could not find a healthier carrot cake version that does not have ingredients I don't have. I did however find a healthier red velvet type cake using beets! So here it is, I will be dropping the mayo and the pudding, I'll add more beets and another egg.
CHOCO - BEET CAKE
1 Duncan Hines chocolate cake mix
1 (4 oz.) instant chocolate pudding
1 c. beets (pureed through blender)
1/2 c. mayonnaise
4 eggs
1 tsp. baking soda
1 1/3 c. water
Mix dry ingredients. Add others and beat for 2 minutes. Bake at 350 degrees 9x13 inch, 45 minutes; 2 (9 inch) round pans, 30 minutes. Frost with desired frosting.
I also found a snacky kind of food, I've got one potato, so I've got what I need.
And then there's always celery and peanut butter. I forgot I had peanut butter.
Okay, off to look some more.

madhen, that was an awesome pic. WTG on the smoothies. You are very creative. I'm too lazy to make them with lots of ingredients, or I just rather chew my food. Maybe in the summer they will sound more appetizing.
Polly, funny pic and no clue. I asked dh what he wanted me to make for Super Bowl and he said Homemade pizza. Really? Again? He loves it. LOL At least he didn't say Rotel cuz that stuff is like crack and I could suck it down. I think I'm going to make some bean dip for me.
I literally sat on the couch with DS watching cartoons for two hours this morning. I was trying to motivate myself to get up and run. It was a cloudy and gloomy day. But, thankfully another two hours passed by and I threw my butt on the treadmill. I always feel better. It's just getting those shoes on!
I prepped and made some healthy food for this week. Then I made dh his SAD dinner and I'm sick of the kitchen for the day.
Lights are out with a candle burning.
I'm in bed with my laptop.

I used a really finely shredded coconut, ppb, so it just added a little bit of texture. I kind of like it.

Polly, I love it! I love it so much.
I used to be a slave to a scale. No, I mean it was really bad. I don't have one. Last year it took me close to the end of the year to weigh myself, even though I obviously knew I dropped pounds. And I weighed on the wii. haha
I was obsessed when I was skinny. I would freak if I saw it go up a pound. lol I rather go by how my clothes fit and the mirror. The mirror doesn't lie like a scale does. I'm no fan of the BMI. Too many flaws. I've seen women in a size 8 labeled obese by the BMI. Ha! Actually there is an awesome site about this floating around on the net about what the BMI considers obese with pics. It's amazing. I'll see if I can find it. Off rant.
Worked out today.

Forgot to take my vitamins last night, but except for that one slip, I've taken them all month. I have some that I take in the morning and some at night.
Eating vegetarian, although I am sure I am eating things that have dairy in them. For the most part, though, if I make it, it does not have dairy (except for my coffee - one more day of cream). I actually had a weird dream last night that I accidentally ate some fried chicken and felt guilty about not making my goal this month!!
I have been trying to pick up my running again, and I managed to go on Sunday and again yesterday. Probably not today, because I have to get going to work and will be stuck late tonight.DH aka Mad Hen

I have some room for improvement on this thread. Tomorrow, I am going grocery shopping and will get things for a veggie tray. I have been craving veggies and fruits. Dh said that he will eat raw broccoli and cauliflower if I have dip for it. Dh is not much of a veggie eater, so I am happy to provide these things. I have been out of bananas for a few days. Missing those too. I have some thawed blueberries so I think that I will have those over a bowl of cereal for bedtime snack tonight.
I am off to get a glass of water. Even though I have been getting 8 glasses of water in a day, I usually drink alot more water like 12 glasses a day. I love ice cold water. So refreshing.
