    Default Mama's Healthy Heavenly Chocolate Truffles

    Directions: In a food processor, process the almonds, walnuts and cashews until fine but not flour. Add in the roughly
    chopped and pitted dates and process until crumbly. Now add in the cocoa powder,
    the vanilla & almond extract, and sea salt. Process until crumbly. Do not process long enough for

    the mixture to get too sticky (like nut butter). You want to work the mixture a bit in your hands

    to warm it up so you can form a ball with it. If you process it for too long, it will become oily.

    Form balls .

    Mahalo for the recipe - it does sound terrific - shall be making some of these up for sure!! Need to check - salted or unsalted nuts?

    Thanks Mauimagic! I use unsalted raw! To add extra nutrition, I usually soak the nuts , then dehydrate ( at 135 to preserve the enzymes) But you don't have to.

    Soaking raw nuts and seeds stimulates the process of germination, which increases the vitamin C, B, and carotenes . It also neutralizes phytic acid, a substance present in the bran of all grains and seeds that can inhibit some absorption of calcium, magnesium, iron, copper, and zinc. Raw nuts and seeds also contain enzyme inhibitors that are neutralized by germination.
