Trail Mix Cookies2 medium sized bananas1/4 cup honey1/2 cup molasses1 Tbs corn starch1 tsp vanilla1 cup whole wheat flour1 tsp cinnamon1/2 tsp baking soda1/2 tsp clovesGenerous handful each of raisins, chopped walnuts, choppedpecans, sunflower seeds, chopped prunes, chopped almonds,or whatever else you may have on hand3 cups quick oats1/2 cup applesauce1/4 cup waterPreparation:Heat oven to 350 degrees. Mix thoroughly bananas,molasses, honey, corn starch, applesauce, water, andvanilla. Stir in remaining ingredients, leaving the oatsand seeds/nuts until the end. Lightly spray cookie sheetwith Pam, or other non-stick vegetable spray. Dough willbe heavy and 'grainy', more of a dough than a 'batter.'Form 'dough' into 16 balls, and flatten and shape intolarge, round cookies. Bake for 12-15 minutes, untilbottoms are lightly browned and cookie holds together.Cool, and enjoy.
