    Default raspberry cookie bar recipe request

    Hi All

    Went to an open house with my mom and sister last weekend and they were serving these raspberry cookie bars that were delicious. I looked on the web and all the recipes had either oatmeal crust or added coconut.

    These bar cookies had a really thick (about 3/4 inch) white crust, seedless raspberry filling and a sugary glaze flecked over the top.

    anyone have a recipe?

    ~Could it have been made with a cake mix? I have a recipe for raspberry cheesecake bars using a white cake mix, seedles raspberry jam and a cheesecake topping.~

    No this didn't have a cake texture. The crust was definitely hard and thick but did have sort of a cream cheese taste to it. Maybe I could use a cream cheese cookie recipe? hhmmmm Thanks for the help though !

    ~You can use a cake mix to make dense bar cookies. Usually you omit the water and an egg or two when preparing the mix. I've had many versions of them because my fil is a baker too and we both love the ease and taste of the bars. Anywho, I hope you find the recipe you're looking for!~

    Thanks for the tip I may have to do some experimenting with my Christmas Baking. Do you add any additonal flour to the mix?

    ~No extra flour. Just stir an egg and whatever oil the box mix call for and the cake mix together with a wooden spoon and spread into a grease 9X13 pan. You can mix in just about any add-in or top with whatever. And they bake like cookies, 15 minutes at 375*. They won't look done but they are. Happy experimenting!~
