We used to use the hydra gel that looks like ice in bubbles bowls (rose bowls) and nest flowers in them when I worked as a designer.
Once a long time ago, one of the girls at work sold a wedding arrangement of flowers in a bubble bowl with water in it. We had these things called "deco dots". They are little pieces of oasis foam that stick wherever you want them to stick to.
She thought she could sink a flower stuck into the deco dot and stick the deco dot on the bottom of the inside of a bubble bowl and add some water.
All was fine until the centerpieces hit the convention center ballroom. All the deco dots floated to the top and popped off the bottom. What a disaster. Then the catering team at the hotel who always thought they were ever so smart, tried to put sinkers (yes fishing sinkers) into the foam to sink the flowers down.
