    Default Zucchini --- Help...how do you freeze those things!

    I have TONS of zucchini and the season is just starting. What do I need to do to freeze them.

    I shred my zucchini and put it into freezer bags.
    It can be sort of watery when you thaw it, so you may have to adjust liquid in your recipes.

    I either shredd it for later use in pasta sauce or zucchini bread, or I slice it, then blanch it in boiling water for 3 minutes, drain and then freeze on a tray and then bag it up.

    I agree with the others, I shred it all and then just freeze it. Good for you that you have so much. I don't have any yet and no flowers either. I am going to have to beg some from people.

    Already beat me to it.
    It helps to freeze on a tray then put in baggies.
    I agree - for the most part frozen zucc will be used for recipes like breads and not eaten as a zucc.

    I generally shred and freeze mine in 2 cup portions. For those of you that slice, blanch, and then freeze can it then be used just as regular zuch. such as in a stir fry or is it still to watery?

    ~Just wanted to add that I've used frozen, shredded zucchini that was over a year old and it was still great tasting! Besides breads, you can add it soups, stews and chilis. If you puree it, you can hide it brownies, cakes, pancakes & waffles and muffins too!~

    ~Nope. Just wash, chop off the ends and shred. You can use a cheese grater if you have one.~

    I have had terrible luck with freezing zuchini. it has such a lousy texture. We're going to try drying it this year.
