    Default I canned this weekend.

    I made 12 quarts of salsa and 18 half pints of 3 kinds of juice jellies and I put away some tomato and veggies in the freezer.

    I made it with my sister and between both days we spent 8 hours in the kitchen but we had a good time. I usually can by myself so it was nice to have a buddy(and another set of hands) even though it took longer since we made 24 jars of salsa and 36 jars of jelly.

    I also bought a new canner, 12 jelly jars to add to my canning stockpile(which I used) and another 12 pint jars for whatever comes up to add to my canning stockpile.

    I can't wait to have something to can. It is one of my favorite things to do. There is nothing like jars full of food you canned yourself.

    Really terrific!! Good bonding time with your sister and sooooo productive!!

    I wish I knew someone who canned - I would love to do it!! Don't know if many people in Hawaii can food - shall start checking it out!!

    basically I just start with 3 #10 cans of diced tomatoes from Sams($4) a can.

    I chop(puree almost, as dh and dds will flip if I put chuncky veggies in there and will leave them in the bowl uneaten)in my food processor to about the mushy stage. Onions, bell pepper, jalopena(I use what I have be it jar or fresh or frozen peppers) cilantro, chili powder, fresh minced garlic and cumin and salt.

    I make it in 3 big batches. Put the veggies and one pureed can tomatoes in a big pan and cook well 25-30 minutes until veggies are well cooked.

    Pour hot salsa into hot jars, seal and process in hot water canner 20 minutes, turn off fire and let them sit another 5 minutes. Remove and cool and let sit 48-72 hours. After 12 hours I tend to check seals. All mine sealed but I put one in fridge already.

    That's great! I've been stocking up jars & lids. On June 5th I move to a nicer place with an awesome stove for canning. I'm making myself wait until then to can, but the itch sure is there!
