One of my fav. all time vieos was of a Mi. chef who makes salads from forest greens. He used parts of a cat tail,nettles and some other greens he got foraging. Sorry I can't recall his name but I wished he was my neighbor. KWIM. Beautiful salad and some kind of soup. He used fiddle heads too. And explained about how you can eat them curled but hurled if open.
