Anyone care to share their homemade breadmaker bread mix...
i tried doing a search and it doesnt bring anything particular up... sorry....today it is cooler here and dh wanted a loaf of bread last night and well ah he has gone out on a picking job(pick through peoples junk and see if he can find anything worth anything). He took the cash and the check card and actually i just dont want to go anywhere today as it will cost me more money than just the loaf of bread.... so i figured i would come here and someone would post a nice recipe for me... thanks!
i ventured off frugal village when i couldnt find a recipe real quick...however it is in the machine right now....however i am going to try this one to.... as homemade bread does not last long in our house ever... i was suppose to start makingit weekly but i got sidetracked...but maybe now i will get the ball rolling again...
1 tsp. salt
1 Tbsp. oil or soft butter
1 egg
1 cup liquid (milk, water, beer)
3 cups flour (I use half bread flour, half other flour, usually including whole wheat, rye, barley, and/or quick oats)
1 Tbsp. dry active yeast (you don't need fast-acting yeast for this)
1 tsp. sugar or 1 Tbsp. honey
All the ingredients should be at room temperature. Turn on machine. I only use the dough setting and then put the loaf in a greased bread pan or on a baking stone to bake after letting it rise for an hour. I think it's easier than trying to dislodge the baked loaf from the bread machine.
I've experimented with herbs (add at the bottom, with the salt), 7-grain cereal, nuts, flax seeds, molasses, an overripe banana, raisins, etc. Most things work fine as long as all is at room temperature, at least half the flour is bread flour (all-purpose is 2nd best), and the yeast isn't dead, and the yeast and the salt aren't touching (salt inhibits yeast).
* 5 lbs bread flour
* 1 cup powdered milk
* 2/3 cup sugar
* 2 1/2 tablespoons salt
1. Stir together all ingredients in a large bowl.
2. Store in a tightly covered container in a cool place.
3. To make a 1 1/2 lb loaf: Use 3 cups mix, 1 1/4 cup water, 2 tbl. softened butter and 1 1/4 teaspoons bread machine yeast.
4. To make a 2 lb. loaf: Use 4 1/3 cups mix, 1 1/3 cup water, 2 tbl. softened butter and 1 1/2 teaspoons bread machine yeast.
5. Whichever one you are making, place the ingredients in your machine in the order recommended by the manufacturer.
6. Select a Basic or White Bread cycle, with a medium or light crust.
7. When done, remove from machine and cool on rack.
That would be some machine if I baked all of it up at once!Fortunately, I can just mix this up, keep it in a flour bin all ready to use - if I don't make some other kind of bread in between, this lasts us about one month. It's just so convenient to be able to se a 5 lb bag of flour to make the mix up.
My machine has a pause function, so that after the kneading cycle ends, I pause and remove the paddle, then restart and go to rise and bake. Of course, you have to be around to do that.

Thanks very much for sharing your recipe for the mix. I think it would be very convenient to mix it up and have it last for most or all of the month. How does it compare in taste to other breads?
It's really a pretty basic white sandwich bread, the butter adds a little richness. I will sometimes use olive oil instead and add 1/4 cup or so of grated parmesan; or add some sunflower seeds or pumpkin seeds to the loaf. Or, add a 1/2 cup of whole wheat flour or potato flakes - you may need a touch more water then, but the other ingredients don't need to be adjusted.
Tomato Bread
This is really yummy ~ very much like the tomato basil bread at Panera Bread, but without the sweet streusel topping (which I don't like anyway)
1 15 ounce can diced tomatoes (including juice)
2 T oil
3 1/2 c bread flour
2 T sugar
1 1/2 t salt
2 T Italian seasoning
1 t garlic powder
1 c parmesan cheese
2 t yeast
Place all ingredients in bread machine in order listed. Set bread machine for 1 1/2 pound loaf, basic medium.
I prefer to set the machine for dough and bake the bread in the oven as others have mentioned.
