    11 August 2010 Elderberry. 11 August 2010 Elderberry

    More elderberry bushes are producing.Tis the season. Today 7 pounds were picked. I am experimenting with making juice by gently boiling for about 20 minutes then squeezing the pulp through cheesecloth. Depending upon the amount of water the juice can have the consistency desired. According the some the juice is beneficial. At least it cannot be worse than commercial fruit juice. One or two pounds of fruit produce about one liter of juice.

    I had lots of elderberries to make jelly from. My only problems...1. I couldn't find a recipe in the surejel package and 2. half of the jars didn't set so Ihad to do it again.I'm waiting now to see if they set up. I hope they do mainly cause it'snot for me. lol. If by chance they don't is there anything else I can do to make it gel?

    The recipe in my sure gel is
    7 1/2 cups of sugar
    3 1/2 cups of juice
    lemon juice
    box of gel.

    If it does not gel this time I would add some more sugar and cook it up.
    If you do not want to mess with it use it as pancake syrup!!

    Anyone have the recipe for elderberry syrup?
    My mom has tons of elderberrys and we dont know what to do with them...

    Make juice. I posted my method. I got 21 pounds of berries so far and will get a lot more since some of the bushes are not ripe yet.

    Thanks I will try that... do you remove the berries from the steams before cooking?

    Removing the berries is what the this post is describing. Maybe you didn't look at the pictures describing the method. Yes, the berries are removed from the vegetation before doing anything with them.
