    There are many tomatoes ripening simultaneously, so it was decided to make tomato juice. The most ripe tomatoes were selected, placed in boiling water for three minutes to loosen the skin, then mashed in a pot. The mashed tomatoes were gently boiled for about 20 minutes with some periodic mashing. The mash was then run through a fine mesh strainer, and presto one has pure tomato juice. Absolutely nothing extra added.

    I did that last year. Probably won't have enough this year to do that (dam grasshoppers). Hopefully, will have enough to can a few batches.

    Love that jewel color!
    I wish we had enough tomatoes to do that, 2nd year in a row that tomatoes were a bust in our garden.

    Last year there were few tomatoes due to the blight, which attacked potatoes also, but completely devastated the tomatoes. This year the tomatoes were the best that I have ever produced.

    Thinking about making the juice: The next batch the tomatoes will be trimmed to remove only the marks and spoiled areas, and the skin will not be removed. Removing the skin would appear as unnecessary. Simply boil, mash, and strain.

    The juice has a most pleasant taste without the addition of any salt. I am more than satisfied.
