    Question Cherry Tomatoes ---help!!

    I am buried in cherry tomatoes.

    I don't have a pressure canner.........do have a water bath canner. Don't have a juicer (but can borrow one from a df)......but have cheesecloth and blender.

    Not real crazy about seeding them NOR peeling them..........

    So...........what do you do with them??

    I have read (on-line) that they shouldn't be canned due to lack of sufficient acid in them...........thus........not even my canning books have 'recipes' specifically for cherry tomatoes.........(grape tom. yes, but not cherry)

    That is the only thing I have left to 'catch up' with and they need to be picked again......but I have been putting it off.

    ANY help is appreciated...........TIA!!

    Tomato salad (EVOO, fresh mozzarella, basil, balsamic vinegar if you like it)

    You can half them and put them in pretty much any pasta recipe.

    Skewered with other veggies/pineapple/mushrooms and grilled, kabobs (I wouldn't put these on kabobs that have meat on them, they'd be on the grill too long...unless it's precooked shrimp or something maybe )

    Me? I just like to eat them by themselves right off of the vine hehe. You must have a ton of them.

    Freeze them whole in a gallon plastic bag flat. Defrost a little and cut up a bit for chili. Seeds never hurt no one.lol Or chop them add water and puree. Freeze flat in sandwich bags. Rip the bag off and toss throw in chili pot.softly.

    Dehydrate them - I think it was Grain Lady who posted about it. I haven't done it, but I looked up a lot of info on it. You dry them really dry & then put them in a food process, mini-chopper, etc. & powder them to make tomato powder. Reconstitue it for spahetti/lasagna sauce, tomato sauce, pizza sauce...you get the picture. Do a bit of internet research on it, there's lots out there or ask Grain Lady (I think she's the one with the info).

    cut in 1/2. roast w/ a cut up red onion and some fresh garlic.

    when cooled, throw it all in your food processor. chop up. add frsh parsley and basil. and freeze. you now have a fab roasted tomato sauce for winter time!

    I usually eat them solo or with EVOO & blk pepper or in cottage cheese halved as well as in a salad.

    I tried this recipe a while back...heat a skillet with a lid with EVOO, finely minced garlic. Let the garlic infuse the oil....add salt & pepper then place the rinsed & dried tomatoes in. Put the lid on until the tomatoes burst. Remove lid, squash the rest with the back of wooden spoon then add in spinach to wilt then cooked pasta and parm. Mix well in pan.

    Thanks............think I will do these two things....for sure. Think I will see how well they puree.........will try a few first and see what it takes like with so many seeds!!

    I dehydrated a bunch last year and they didn't 'do much' for me. Not real crazy about them dried.

    I can't keep up with them......with just me eating them....so I have a bunch!
