    Default Peppers, peppers what to do?

    Good Morning!
    My wonderful friend has jus brought me SOOOOO many peppers! Green ones, red ones, yellow ones, sweet and hot. I know I can freeze some, but I want to use some, maybe make pepper jelly? If anyone has good ideas or recipes, please let me know!

    Last year, I had a lot of bell peppers, hot peppers and banana peppers. I made pepper jelly (from the Ball Canning cookbook), which turned out super delicious! I also canned the banana peppers, sliced them into rings and pickled them. The rest of the peppers, I would chop up and freeze in ice cube trays or muffin cups to use throughout the winter in recipes.

    I made pepper jelly for the first time this year and it came out great. There's various recipes here Harry and David's Onion and Pepper Relish - Cooking Forum - GardenWeb I used the 2nd one listed. I used a variety of red and green peppers from the farmer's market and my garden, to make up the quantity indicated.

    Then I sent two pint bags of extra peppers to work with DH.

    Earlier in the season I sliced up a bunch and saute'd them with onions, just barely cooked them and then froze them in portions to be used with fajitas later. I just have to warm them up and dump them on the meat when we're ready to eat. That way I can concentrate on the grill, and not have to run inside to watch the stove, too.

    Lucky you! A couple of quick and easy dinners I like to make are peppers and onions in scrambled eggs with parmesan cheese, and I also like to fry peppers and onions with some type of smoked sausage. Yummy!

    we use to just cut up excess green peppers into small squares and freeze in large freezer bags. we cook the green peppers, onions and either add chourico (portuguese) or hot italian sausages. then when cooked we put into subs and melt cheese over the top. that is how i like them.(like luckybustert said) hope that helps.

    Stuff the smaller ones with cream cheese or other cheese of your choice, then wrap them in bacon, fastening the ends with toothpicks. Grill or broil and serve. Anaheims are my favorite for this. Most people use jalapenos, but the Anaheims are less hot but still have a little bite.

    Now I'm hungry for stuffed peppers.

    Green Peppers, tomatoes and cucumbers were made into juice and pressure canned for long term storage. The pictures depict the method. This is a suitable method for utilizing excessive garden produce. All garden produce appears in abundance at about the same time.
