    Default Pumpkin Juice

    Two small pumpkins were converted into juice. The outer rinds were incorporated. The seeds and centre mush was discarded.I chose small pumpkins, but see no reason why larger could not be used.

    Method: Cut the pumpkin into small pieces, boil until soft, beat into a mash with the hand blender, put through a mechanical strainer. The juice was then Pressure Canned at 15 PSI for 15 minutes for long term storage at room temperature. Six litres of juice was obtained from the two pumpkins.

    In N.A. pumpkins are used only for pies or jack-O-lanterns at Halloween. After studying the beneficial nutrition value of pumpkins, I decided to experiment.The juice is pleasant to drink. Just another vegetable for consumption and variety, and readily available, and easy to grow in my area.

    Durgan, I use pumpkin to replace fat in baking too. And I make a Curried Pumpkin Soup that is to die for. There's pumpkin bread, pumpkin muffins, pumpkin cookies (but that's junk food). There's also pumpkin smoothies. I have a cinnamon bun recipe that calls for pumpkin puree instead of fat as well.

    There's lots to do with pumpkin! Which is why I have 32 pureed cups of it in my freezer.

    The pumpkin is a a fine food, but few people use the amazing fruit. Congratulations.

    I have a big pumpkin I'm going to cut up in a couple of weeks. I'm going to look online for pumpkin recipes - of course there's pie and bread, but I'm thinking maybe just roasted pumpkin with some seasoning; maybe a chunky pumpkin broth soup (not creamed -blech).

    Save more $ in ES
    Frugal challenge
    Do three things daily
    One new recipe a week
    Prep for zombie apocalypse
