    Meat industry denies butchers use 'meat glue' in retail | NATIONAL News

    The meat industry says the use of so-called "meat glue" occurs only in restaurants and is purely for portion control and not to "glue scraps of meat together".

    Greens consumer affairs spokesperson Sue Kedgley has lodged a complaint with the Commerce Commission over the use of transglutamisase (TG), an enzyme that bonds meat.

    Kedgley claims the practice breaches the Fair Trading Act "as it is misleading and deceptive".

    She said she believed butchers are also gluing scraps of meat together and selling them as prime cuts of meat.

    This could not be a more broad, useless statement. I'm going to make a wager that she knows NOTHING about cutting meat.

    I watched a show where they used the glued meat and placed it in a form to make a steak .They had it side by side with the cut steak. It looked like the real thing.I believe it was implied that resturants of a sneaky reputation may use this tactic?(Was this a news special- I can't remember?)We have our beef processed from our family butcher. I do think they use meat scraps for things, but they do not use the glue to hold it together, or claim that it is a cut of meat.I will have to ask about this to see his take on it!We get a couple of suet balls with our order- they use fat scraps and roll it in seeds and make birdfood balls, so I guess they try to use everything.Our birds love them.

    As a butcher for 10+ years and knowing and worked with many, I can almost guarantee none of them have used it. Gluing meat together...pssssh. A typical butcher wouldn't have time!

    I can't see our butcher doing such a thing, the way I took it was that maybe some sneaky restaurants were doing this in their kitchens.I never cease to be amazed though, at some of the things people will do to cheat, lie or steal.

    I used to eat glue 30 years ago when I was a kid and I think I'm just fine.

    Elmers pancakes and sausage for breakfast, Elmers burgers for lunch, topped off with the Elmers steaks for dinner. Sometimes I believe it's the only thing that holds me together.

    Elmer is a bull, I saw his picture on the bottles in my pantry. I think he'd be proud he's helping put his friends' parts all back together.
