    Default Cooking Dried Beans

23 October 2010 Processing Dried Beans. 23 October 2010 Processing Dried Beans.

A variety of dried beans purchased in bulk is very low in cost. This variety is a possible replacement for meat.

Two cups (500 ml) enlarges to about four after cooking. The process is: Wash thoroughly. Boil for 20 minutes, rinse, place in pressure cooker and cook for 90 minutes. Place in open pot, add sauce, and boil for about 15 minutes to mix. Store in containers and freeze the excess. Pictures depict processing.

The sauce consists of molasses, horseradish, honey, mustard, tomato paste, and paprika. Generally it can be anything to suit one’s taste.

I sure wish I liked beans more. Healthy, cheap, colorful. Maybe I'll eat them anyway, and eventually start to like them.

mndtrp - try substituting pureed black beans from a can(NOT drained) for the oil in a brownie mix, or chocolate cake mix. Use a white bean when its a lighter cookie or cake - you most likely won't tell it's there!

Three bean salad (I use red kidney beans, garbanzo beans, as well as onion, green beans and yellow beans - in a light italian dressing. (very different texture than baked beans)

Lots of bean recipes, and they can really taste different from each other.

I tried the beans in a brownie recipe once. Never again!

    Love three-bean salad.

I can't stand beans that have been cooked to mush. We attend potlucks where they're served and the pot is always empty. I just don't get it.

Bean salsa is really good, too. There are so many recipes for bean salsa and three-bean salad, you might be able to find something you like.

I love chili beans too. I make them with a little butter, Worchestershire sauce, Tabasco, and liquid smoke. Then just eat them like soup, with crackers. Mmmmmm!

Surprisingly, we don't eat any desserts. Not that we don't like them, we just don't ever make any.

However, I do imagine I could add them into the mixings of more meals. I always think of the beans as the main ingredient, not as a small portion.

My wife loves refried and chili beans. About once every other month I make a batch of both in the crock pot, and freeze in small containers for her to take to work.

Beans are a good way to stretch the hamburger in sloppy joes.
