    Default I'm drowning in squash over here!

    I'm giving it away, cooking it, eating as fast as I can and still I think I could feed a third world country! I'm thinking about taking sacks of it and just walking around town to the poorest looking houses and leaving it on the doorsteps. We have this bushel basket and everytime I get the thing emptied (seems like daily) I set it outside and literally Gripey brings it right back in FULL! We have 1 zucchini plant and 2 yellow crookneck squash plants. I'm pulling my hair out

    ~48 yr. old sahw, livin' it up in our empty nest, smack dab in the middle of everywhere.~

    I read somewhere about someone canning squash. I'm alot help aren't I.

    Send it my way I can't grow squash to save my life lol!!

    You can shred & freeze the zucchini for bread & adding to soups & chili.

    my squash are being attacked by some fungus

    but before the attack i was hauling in a half dozen a day, leaving some on FIL's doorstep!

    I know what you mean about getting overwhelmed, I just spent a good while in the kitchen with zucchini. Gave mine a quick blanch & froze.

    Also had a bunch of cucmbers I needed to do something with and made these but cut way back on the sugar. http://www.recipezaar.com/9458

    I am drowning in tomatoes ~ today I am just throwing some in the oven for a long, slow roast and pureeing and tossing in the freezer to use as tomato sauce.

    I made squash pickles last year that were really good. I love squash casserole too (I use Paula Deen's recipe--yummy!)

    A great recipe for zucchini....

    split the zucchini in half the long way
    scoop out the insides to make boats
    rub some olive oil on the inside of the boats and on the cookie sheet so the skin will have flavor
    take the insides of the zucchini and mash them...they are raw but they will still mash
    take the mashed zucchini, add some bread crumbs and some fresh or canned tomatoes(I add a little olive oil to the bread crumbs if I use fresh tomatoes so the mixture is wet.)
    place the mixture in the boats
    I add salt, pepper and paprika

    I cook my boats at 375. I am not sure of how long because I go by smell and sight.

    My kids love these.

    Im envious - my plant is done I wish we had more, I could eat one of those massive zuc's I posted in another thread a day! Or close to one LOL. Soups, sauteed, in lasagna, stiry fry etc I want to try the bread recipie - is it easy??
