    Question Can I freeze beets?

    My mom gave us at least 10 lbs of beets, which is no problem. We love beets. But I don't think we can eat them all before they go bad. I've cooked them all...can they be frozen or do they have to be canned? I have no way of canning them....

    Beets

    Preparation – Select deep, uniformly-red, tender, young beets. Wash and sort according to size. Trim tops, leaving 1/2 inch of stems and tap root, to prevent bleeding of color during cooking.
    Cook in boiling water until tender-for small beets 25 to 30 minutes; for medium beets 45 to 50 minutes.
    Cool promptly in cold water. Peel, remove stem and tap root, and cut into slices or cubes. Package, leaving ½-inch headspace. Seal and freeze.
    But has anyone successfully frozen them? Do they lose their texture like potatoes do?

    I have frozen them...they don't lose their texture, but they didn't taste reallly great....maybe I did something wrong or they were old

    I tend to pickle things - let's you short cut some of the "real" canning tasks, but you basically still have to make sure your containers are imaculate and that things are well sealed. Freezing sounds easier!
