Winter garden question

I am getting my sprouter out for a winter garden. Can anyone tell me what they are going to put in? I have never planted a winter garden and am not sure what will grow into the fall months.

Greens - collards, mustard, etc.
Hard shell squash - butternut, acorn, etc.

That's all I grew in my winter garden in SC. I know VA is colder, so I don't know what else you could grow.
