Limp celery? Refresh it...(tried & true)
...by adding stalks to cold water--the colder the better. I was skeptical when I first read this tip, but it worked like a charm when I tried it the other day.
Another tip to prevent it from getting soggy is to wrap it in aluminum foil. I haven't tried that one yet
Oh, and I am pretty sure I read the first tip on here somewhere, but I couldn't find it when searching.

~Yeah, the ice water does work well when the stalk is still green. Mine turned white so I threw it in the dehydrator this morning. It'll still flavor stuffing well green or white.~

I've always chopped up my celery and froze it if it couldn't be revived. That way I can easily use it while cooking dishes, soups or stews that I require it in. I always do this with the leaves, I don't like eating them raw, but they add lots of flavour to dishes!
