Recipe using onion skins & eggs!
This is a Sephardic Jewish recipe. Orthodox Jews do not cook on the Sabbath so they've invented many very slow cooking recipes that can be prepared the day before to be ready for Shabbat lunch. This one is fantastic!
Huevos Haminados
Ingredients
outer skins from 4-6 onions (yellow is best, red works, haven't tried white)
6-12 eggs
1-2 tablespoons olive or vegetable oil (I omit this)
Place all the ingredients in a saucepan with a tightly fitting lid and add water to cover. Bring the water to a boil, cover tightly and lower the heat to a simmer. Simmer for about 20-24 hours, adding more water as necessary to keep the eggs immersed in water.
The egg shells turn a warm shade of brown, the egg whites are tinted pale brown, and the yolks are a muted yellow. They peel very easily (wait until they cool a bit) and can be reheated. You can make egg salad, use them in salads, or just eat plain. I don't even like hard-boiled eggs but these are really fantastic. There is a subtle flavor to them, it doesn't taste like onions at all, and the yolks are very creamy.
I believe you can also make them in a crock pot, or in the oven. If you google the Huevos Haminodos you'll find other methods and some recipes that call for the addition of ground coffee (which I've never used)

Oops, that should say "google Huevos Haminados" not Haminodos. I wasn't able to edit my post?
