Mashed potatoes
I am sure all of you have your own ideas with leftover mashed potatoes, but I will share my tip anyway.
My son supposed to come for dinner, but couldn't make it. So I had to do something with my mashed potatoes. I made Gnocci and put in the freezer,I am not sure if gramatically is correct. Basicaly add flour, parmesan cheese, an egg,salt pepper and make like a dough. Roll in shape or rope and cut small pieces diagonally, freeze. When needed boild in water for 7 min. strain and toss with pesto. Yammy!
In the past I used to make patties out of mashed potatoes, by adding a tin of tuna, green onion, fresh bread crumbs, an egg frozen peas and voila!

Leftover mashed potatoes? Mashed potatoes we aren't anxious to eat? Hmm, doesn't occur in my home! My BIL makes lefse with it sometimes, but we LOVE mashed potatoes so they just stay mashed potatoes. There is an Ecuadorian dish called llapingachos (sp?) that is sort of like mashed potatoes in a lump with some cheese in the middle, and fried in a little oil. Fattening but very delicious. You could also mix some into a soup as thickener and flavoring I suppose, but haven't actually tried it myself. I am hungry now just thinking about mashed potatoes!

For breakfast they are great fried up in a little butter to make them brown. Mashed potatoes never go unwanted at our house.

I can honestly say I have never had leftover mashed potatoes in my home! I swear our kids will literally Lick the dang bowl if you let them!!!!
However, my Mom, she would use them to spread on top of a casserole, then butter them after they come out of the oven,,,YUM!! And she makes morning patties to go with breakfast too, but it is just her and my dad so they always have left overs!!Proud wife to Randy

Sounds yummy. We do the potato patties on the off chance we ever have any and then have any leftover. I add and egg and salt and pepper and fry them to brown on each side. YUM.

You can also make homemade perogies with the leftover mashed potatoes. I really want to do it sometime, but I don't have a rolling pin to roll out the perogy shell.

Potato bread. Mashed potatoes added to bread dough make the loaf rich and soft. Yum!
We like mashed potato cakes, too. I roll them in bread crumbs and cook in a little butter until the outside is crisp.

Use a wine bottle to roll the dough and a glass or a cup to cut the round shape.

I am glad I posted the mashed potatoes theread, I myself got so many ideas to use them. Potatoes are cheap and when money is tight, you can feed your family by creating all delicious dishes. Thank you all for sharing

Well there is only 2 of us and fiance will not eat leftover mashed potatoes. When we do have any leftover it is usually only enough for one serving so I take them in my lunch the next day to work. I try very hard to make just enough for one meal.

I've made homemade perogies -easier than you might think! Just use a glass bottle or wrap a can of soup in plastic wrap to do the rolling. You can use an empty tuna can to cut the circles (use can opener to open both ends), then just fill with a spoonful of potato (I mix in cheese and butter sauteed onions, garlic is good too), fold over and pinch the edges, boil and eat!
