Cool idea for corn tortillas
I bought one of those big bags of small corn tortillas.
I used my cookie cutters and cut different shapes, but if you don't have the cutters or the time, then just cut them in fourths and put about an inch of canola oil in a fry pan and threw them in turning maybe twice. One to a paper towel, a little salt and wow...
They made a great chip.
I know you can also do this and dust with cinammon and sugar...
I am going to try enchiladas next..will update on that one.
Just wanted to share..

I make taco pie with corn tortillas! It is really the only way I like corn tortillas! Take a 9x13 pan and layer tortillas with taco meat, cheese, salsa, beans, etc. Basically, anything you would put on tacos. Then heat through. It is really excellent! I haven't made it in awhile, but it sounds really good. Might have to add it to my menu for next week!
