For those of you who are new to cooking (like me)
I learned this yesterday when I was making Salmon patties... The patties are odd because every ingredient except for the egg (binder) is cooked..You want the patty to be cooked thoroughly, so how do you judge?
Well I found it was like gauging the condition of steak.. Gently press the middle if it gives (stinks under you finger) it's not cooked. If it is taught/firm under your finger it's cooked!

This is probably obvious to some old hands, but I'm a newb! =D

You can make them with drained tuna to save $$$. I make up several cans of tuna/salmon and pan fry them. Then I freeze them. Thaw (overnight in the refrigerator or a quick zap in the microwave) and you can re-fry them for a really crisp outside.
I think salmon/tuna patties were one of the first foods our kids learned how to cook, and they are still a family favorite.
