    Default Homemade Jiffy Muffin Mix

    There is a cornbread recipe I like to make that uses Jiffy cormuffin mix. Reading other posts here got me thinking that there must be a recipe for this somewhere.
    Here's what I found :

    2/3 cup flour
    1/2 cup yellow corn meal
    3 Tb sugar
    1T bkng powder
    1/4 tsp salt
    2 T veg oil

    1.5 cup = 8.5 oz box muffin mix


    Have yet to try...wil report back.

    Anyone else tried it?

    I haven't tried it, but I'm going copy it should I ever need it. I mill my own cornmeal and use freshly milled flour, so now I have an idea of the ratio of ingredients to use.

    I haven't tried it, but waiting to see how yours comes out. We eat alot of cornbread, so I'll be waiting for you to repost so I can use this!

    I would like to see if you like it. Jiffy has beef and pork lard in it as well. It's also very sweet. Try it and post if you like/dislike it.

    That recipe sounds good, but I am going to leave out the baking powder and salt and try it that way for my little friends.

    Yesterday, I made a batch using the Jiffy box mix. We don't like it, but I figured I needed to use it up and ending up letting the chickens have it for a treat. I crumbled it up and they lined up at the feed dish like little piggies.

    I am testing the homemade mix today.
    The recipe I use calls for one box of jiffy mix. To that is added the rest of the ingredients. I will report back & post all later.

    Default Jiffy Corn Casserole Recipe (Cooks.com)

    small box of jiffy corn meal muffin mix (see homemade recipe on first post of this thread)

    1 can whole kernel corn undrained (I use 1 cup thawed frozen corn)
    1 can creamed style corn
    1 stick butter, melted
    2 eggs, beaten
    1 tsp sugar
    8 oz sour cream (I used 1 cup or half a container)

    Bake at 350 for 45 minutes


    It's in the oven now. We'lre waiting for it to have with veggie soup for a hot lunch.

    Back to report....the recipe turned out great! and to note: I left out the 2 T veg oil in the mix recipe.
    Now I'm off to look at some more recipes using the jiffy mix, thanks to grainlady!

    I agree about Jiffy mix being too sweet - I usually substitue salsa verde for the liquid anyway.

    Thanks for the update. Wrote down mix. I like making muffins with it and adding blueberries to it. Really moist and yummy.

    Made cornbread tonight to go with the white chicken chili. Use Jiffy Mix and added salsa verde instead of milk and dumped in a can of whole corn - turned out yummy!!
