    Wink Frugal Tip 9/12

To cook beans quickly: Soak beans overnight. Drain. Then freeze in whatever quanity you choose. Freeze the beans. When you cook them, they will soften easily in about 20 minutes. The reason: When they are frozen, the water expands and breaks some of the cellulose strands that hold the cells together. This is the same action that occurs when you cook beans for hours. You can shorten the cooking time even more by putting frozen beans in your pressure cooker.
