pot pies?
anyone have any tips/recipe ideas for homemade pot pies?

I make pot pie with canned biscuits as the topping. I use up leftover turkey (hint hint!), chicken or whatever meat I have, veggies (leftover or freshly cooked) and some white sauce or cream
of mushroom soup.
I also make Impossible Pies with odds and ends. I have to make a double batch of those because everyone here LOVES them! They are easy to make and sooo good.

I was reading a quick and easy pot pie out of turkey day leftovers. It's a bit of a cheat but to buy store bought pie crusts (the already rolled out, not frozen ones) and put turkey, mashed potatoes, dressing and whatever veggies you have left in the center, form into a pie or even a fried pie shape (or calzone). Bake until browned. Sounds pretty good, eh? And not too difficult.

i use left overs, cream of chicken soup and some times i top mine with either bisquits or corn bread. bake as topping says

Sara, I have always used the recipe out of Better Homes & Gardens (the red & white checkered book). I use the pie crust reciie that's the vinegar and egg recipe and I get RAVE reviews for that! My ex used to say I should enter my chicken pot pie in a contest

I was watching the food netowrk the other day and Giada (Everyday Italin) make Pizza pot pies, she used pizza dough on the top for crust and put sausage, cheese, tomato sauce, and veggies inside. Looked really yummy to me as I am not a fan of gravy. And pizza dough is so cheap and easy to make (I use my bread machine). I will be trying this at some point.

I use the store bought pie crusts as well, also not frozen. One time I only had cream of chicken dijon in my pantry so that went in with chicken stock for the gravy and it was delicious. Of course, Campbell doesn't make it anymore because I haven't found it for over a year. I did add a couple tablespoons of dijon mustard and a bay leaf in my last pot pie and that came close.

My sister and I use the one on the Bisquick box, it's good and fast. Even my husband likes it. You can use frozen or canned mixed veggies.

I like to make shepherd's pies.
mix leftover turkey, sauteed onions and leftover veggies like carrots, green beans, cauliflower with leftover gravy in a pie dish, top with leftover mashed potatoes and cheese and leftover French's fried onions (if you used them). Cook in 350 degree oven until done. Serve with a salad and leftover cranberry sauce.
