oven grilled veggies
we dont have a grill...
rather, we dont have a place to have a grill in our condo-society (and I'm NOT using the public one on the other side of the complex!)

SO...
any ideas on how to grill some veggies in the oven?
I'm thinking zucchini, squash, onions, potatoes, maybe carrots even.
recommendations?
suggestions?

Yeah! just use the broiler like you would when you want to broil steaks.

You can have wonderful oven roasted veggies by using fairly high heat and coating with a little oil and spices. When you select your veggies, think about how long you would cook them on the stove and consider blanching some of them. For example: by the time your potatoes are fork tender, your zucchini will be mush. If you don't want to blanch some of the veggies, just roast the ones that would take longer first, gradually adding different types to the oven to allow for even doneness. You could also soak some corn still in the husks and bake them. Soaking them in water should help control smoking as you roast them.

How about a stovetop grill pan? They can be expensive if bought new, I'm sure they can be found fairly inexpensive on ebay or even a yardsale.

My mother has a grill insert for her JennAire range and she uses it all the time and the food tastes like it was grilled outside.

I love roasted veggies. What I do is line my pan with foil, coat with olive oil and all the spices you like. Usually oven is around 450. Depends on the veggies, so the cooking time is around 30 to 45 minutes.
One of my favorites is to buy the bag of zuchini and squash mix.
Just potatoes, carrots, onion, and garlic is yummo that way.
