Silly Me...
After cutting up two big potatoes for dinner, I decided that I wanted rice instead. Will they be okay in the fridge covered with water in a tupperware? I plan on making potato salad with them on Thurs to take with us on our trip in the cooler, so it will only be two days.

They wouldn't last that long for me. Could you boil them really quick and then refridgerate them? I just don't have good luck storing raw cut potatoes.

I was told that you can add either sugar or salt ( I don't remember which but I will see her tomorrow and will ask for you) in the water and they will stay white.. However, if they were my potatoes... I would boil/drain them and put them in the fridge.

If they are kept covered completely with water they should be fine. When I worked in the deli we would cut up potato wedges for 2 days at a time. We covered them with water in huge rubbermaids and put them in the meatcutters fridge.

I sometimes put a drop or two of lemon juice in mine when I put them in the frig if I remember.

If you add some salt, they should keep as long as they are covered competely with water.
